Rhea's Shrimp or Crawfish Fettuccini  

I use crawfish when it is in season and shrimp other times of the year. We are fortunate in Louisiana to have an abundant supply of both.

Ingredients

1/2 cup celery, chopped

1/2 cup mushrooms, chopped

1/2 cup green onions,chopped

1 pod garlic, chopped

2 Tablespoons olive oil

1 1/2  cup evaporated skim milk

2 Tablespoons cornstarch

1 Pound crawfish or shrimp, peeled

8 Ounces fettuccini

Salt and pepper to taste

7 1/2 ounces of low fat cheese (Light Velveta)

Instructions

Spray pan with Pam, add olive oil, then celery, mushrooms, green onions, garlic. Saute. After the mixture is sautéed add 1 cup of evaporated skim milk, 1/2 cup of evaporated skim milk mixed with 2 tablespoons of cornstarch, and 1 pound of crawfish or shrimp, simmer. Cook the fettuccini according to directions on package, drain, and add to mixture. Add Light Velveeta cheese, salt and pepper and simmer until cheese is melted.

Food Facts

This is a great dish if you are watching your weight. If you are on a low carbohydrate diet you could even use whole wheat fettuccini.
